When carving your pumpkin don’t forget to roast the pumpkin seeds!
🎃 Pumpkin seeds are loaded with fiber, protein, heart healthy fats, vitamin E, magnesium, potassium, calcium, phosphorus, copper, and zinc.
🎃 Simply rinse and dry the seeds. Coat in some olive oil and salt (be careful with the amount of salt!) and roast at 300 (can adjust temperature depending on how crispy you like them) for approximately 45 minutes; tossing a few times during cooking.
